Spinach, Corn & Cheese Fritters

Serves: 4

Ingredients: 

  • 250g frozen spinach, thawed & drained 
  • 200g cottage cheese 
  • 2 large eggs 
  • ¼ cup reduced fat milk 
  • 2/3 plain white flour 
  • 1/3 cup grated cheddar cheese 
  • 2 spring onions, chopped 
  • ¼ cup corn kernels 

Method: 

  1. In a large bowl, mix all ingredients until well combined. 
  2. Spray a non stick pan lightly with oil. Dollop the mixture into the pan over medium heat, & cook until browned on both sides.

Tip: These are great in the lunch box, or serve with a poached egg & tomato for breakfast!
