- 250g frozen spinach, thawed & drained
- 200g cottage cheese
- 2 large eggs
- ¼ cup reduced fat milk
- 2/3 plain white flour
- 1/3 cup grated cheddar cheese
- 2 spring onions, chopped
- ¼ cup corn kernels
- In a large bowl, mix all ingredients until well combined.
- Spray a non stick pan lightly with oil. Dollop the mixture into the pan over medium heat, & cook until browned on both sides.
Tip: These are great in the lunch box, or serve with a poached egg & tomato for breakfast!
