250g tinned salmon (in spring water)
1 carrot, grated
1/2 cup pumpkin, cooked and mashed
1/2 capsicum diced finely
1 onion chopped finely
1 egg, lightly whisked
1/2 cup breadcrumbs
1/4 cup fresh herbs, chopped
Olive oil spray
1. In a large bowl, mix all of the ingredients until mixture holds together. Mould into patty shapes. Spray a non-stick frying pan with olive oil spray and place on medium heat.
2. Add 2-3 patties into the pan at a time, cook on each side until golden brown.
3. Serve with steamed vegetables.
Tip: Dill and parsley work well in this!
