Mediterranean-Style Baked Fish

Ingredients (serves 4)
4 x 150g white fish fillets
2 cloves garlic, crushed
1/2 cup pitted black olives
4 tomatoes, cut into quarters lengthways
3/4 cup white wine
4 medium potatoes, chopped
2 cups green beans, trimmed
Handful fresh basil, roughly torn


  1. Preheat oven to 180°C. Place fish into a non-stick baking dish, top with garlic, olives, tomatoes and wine. Cover the baking tray tightly with foil so no air escapes. Bake for 20 minutes.
  2. Meanwhile, boil potatoes and steam green beans until tender.
  3. Serve portions of fish topped with the tomato and olive mixture alongside potatoes and beans. Scatter with basil leaves before serving.
