Ingredients (serves 4)
4 x 150g white fish fillets
2 cloves garlic, crushed
1/2 cup pitted black olives
4 tomatoes, cut into quarters lengthways
3/4 cup white wine
4 medium potatoes, chopped
2 cups green beans, trimmed
Handful fresh basil, roughly torn
- Preheat oven to 180°C. Place fish into a non-stick baking dish, top with garlic, olives, tomatoes and wine. Cover the baking tray tightly with foil so no air escapes. Bake for 20 minutes.
- Meanwhile, boil potatoes and steam green beans until tender.
- Serve portions of fish topped with the tomato and olive mixture alongside potatoes and beans. Scatter with basil leaves before serving.
