2 cooked chicken breasts
200g bulgur wheat
1 tbsp ground cumin
1 tbsp ground coriander
½ tbsp red chilli flakes
1 star anise, finely ground
1 lime
75ml olive oil
120g low fat feta, crumbled
80ml low fat yoghurt
1 tsp Dijon mustard
Juice of ½ lemon
60g walnuts, toasted
½ cup corn
1 large handful coriander
3 large, peaches, sliced


1. Prepare the wheat to packet directions. After preparing the wheat, remove as much water as possible and place in a large bowl.
2. Add all spices, lime zest and juice and olive oil. Mix well to combine and leave for 15 minutes to absorb the liquid.
3. Meanwhile, in a blender or food processor, combine feta, yoghurt, mustard and lemon juice until smooth.
4. Chop the chicken. Add chicken, corn, walnuts and coriander to wheat. Fold together before drizzling with dressing. Top with peaches to serve.
