Ingredients

Cooking oil spray
1 cup wholegrain oats
1/2 cup puffed rice cereal
1/2 cup mixed dried fruit
1/2 cup finely chopped dried mango
1 tablespoon sunflower seeds
1 tablespoon pepitas
1 tablespoon sesame seeds
1 tablespoon linseeds
2 tablespoons oat bran
2 tablespoons processed bran
2 tablespoons self-raising flour
1 egg
1 egg white
2 tablespoons olive oil
2 tablespoons apple juice concentrate

Method

Step 1: Preheat oven to 180ºC. Spray a 20cm x 30cm cake tin with oil and line with baking paper. Set aside. Place all dry ingredients into a large bowl and mix well.
Step 2: In another bowl, whisk together egg and egg white, until frothy. Make a well in the centre of the dry mixture and pour in eggs, oil and apple juice concentrate. Mix until all ingredients are coated.
Step 3:  Press mixture into prepared tin. Cook until golden brown, approximately 25 minutes.
