Turkey and Cranberry Skewers

Ingredients (serves 4)

  • 2 large boneless, skinless turkey breasts
  • 1 large red pepper
  • 12 button mushrooms
  • 8 bay leaves
  • 6 tbsp cranberry sauce
  • 1 tsp olive oil

Method

  1. Cut turkey and red pepper into 2.5cm cubes.
  2. Thread turkey, pepper, mushrooms and bay leaves onto 4 long or 8 short oiled metal kebab skewers.
  3. Sieve cranberry sauce into a small heatproof bowl, then stir in the oil and stand the bowl in a pan of boiling water.
  4. Heat without boiling until the sauce is thinner.
  5. Brush the cranberry sauce over the kebabs and cook in a pre-heated non-stick pan, grill, or barbecue for 8 to 10 minutes or until cooked through.
  6. Turn frequently and baste with remaining cranberry sauce.
