2 mountain bread wraps
1 mango cheek, sliced
2 tbs avocado
100g salmon fillet
75g black beans, drained
1/2 red onion, sliced
100g mixed salad leaves
1 lime
1 red chilli, finely diced
2 tbsp fresh coriander
1. Preheat oven to 200C. Place salmon on some foil, squeeze over lime and sprinkle with chili and coriander. Gently package up, sealing the edges. Bake for 20 minutes.
2. Remove from oven, cool slightly and flake with two forks.
3. To make your burritos, divide salmon, onion, mango, beans, salad and avocado between wraps. Fold and enjoy!
