- 250g dates
- 125g glace pineapple, roughly chopped
- 125g glace apricots, roughly chopped
- 125g whole blanched almonds
- 125g pecans
- 2 x 100g packet multi coloured glace cherries
- 3 eggs
- 1/2 cup brown sugar
- 90g margarine
- 1/2 cup plain white flour
- 1/2 teaspoon baking powder
Method
- Combine all fruit and nuts in a large bowl. Reserve 1 cup for top. Beat eggs and sugar in a small bowl with an electric mixer until light and fluffy. Add margarine and beat until combined.
- Stir margarine mixture into fruit with sifted dry ingredients. Spread mixture evenly and firmly into 2 greased and lined 8cm x 26cm bar tins. Press reserved fruit and nut on top.
- Bake in a slow oven 150 degrees for 1 hour. Cool in tins.
- Store in refrigerator and serve in thin slices.
