Stained Glass Bars

Makes 40 serves

Ingredients

  • 250g dates
  • 125g glace pineapple, roughly chopped
  • 125g glace apricots, roughly chopped
  • 125g whole blanched almonds
  • 125g pecans
  • 2 x 100g packet multi coloured glace cherries
  • 3 eggs
  • 1/2 cup brown sugar
  • 90g margarine
  • 1/2 cup plain white flour
  • 1/2 teaspoon baking powder

Method

  1. Combine all fruit and nuts in a large bowl. Reserve 1 cup for top. Beat eggs and sugar in a small bowl with an electric mixer until light and fluffy. Add margarine and beat until combined.
  2. Stir margarine mixture into fruit with sifted dry ingredients. Spread mixture evenly and firmly into 2 greased and lined 8cm x 26cm bar tins. Press reserved fruit and nut on top.
  3. Bake in a slow oven 150 degrees for 1 hour. Cool in tins.
  4. Store in refrigerator and serve in thin slices.
