Spiced Cherries with Vanilla Yoghurt

Makes 8 serves

Ingredients

  • 250ml (1 cup) water
  • 55g (1/4 cup) caster sugar or sugar substitute
  • 5 whole cloves
  • 2 cinnamon sticks
  • 800g cherries (stems still attached)
  • 2 x 200g containers diet vanilla yoghurt

Method

  1. Combine the water, sugar, cloves and cinnamon sticks in a small saucepan.
  2. Stir over medium heat until sugar dissolves.
  3. Bring to a simmer over medium heat.
  4. Remove from heat.
  5. Place the cherries in a shallow heatproof bowl and pour the hot spiced sryup over them.
  6. Set aside for 1 hour.
  7. Serve at room temperature or chilled with the vanilla yoghurt. Use the stems to dip the cherries.
