Ingredients (serves 8)
- 2 x 250g punnets strawberries, chilled and hulled (leaves and core removed)
- 1/4 cup firmly packed fresh mint leaves
- 500ml (2 cups) unsweetened apple juice, chilled
- 750ml bottle quality sparkling mineral water, chilled
Method
- Puree the strawberries and mint in a food processor or blender until smooth.
- Add the apple juice and process to combine.
- Strain through a fine sieve into a jug, pressing with the back of a spoon to extract as much juice as possible.
- Discard the pulp. Cover and place in the fridge for 3-4 hours until well chilled.
- To serve, divide the juice mixture among 8 serving glasses.
- Gradually add the mineral water.
- Allow bubbles to subside and serve.
