3 tablespoons olive oil
6 skinless chicken breasts or thighs
Salt and pepper
2 brown onions, sliced
4 garlic cloves, minced
1 teaspoon fresh thyme
2 cups chopped tomatoes, juices included
2/3 cup olives, halved
3 tablespoons chopped parsley
Step 1 Over a medium heat, heat oil in a large skillet. Add chicken and cook for 6 minutes each side until browned.
Step 2 Remove chicken and set aside. Add onions, garlic and thyme to skillet stirring frequently for 3 minutes. Stir in tomatoes and olives.
Step 3 Return chicken to skillet, turning down heat to a simmer. Stir, then cover and simmer for 15, or until chicken is cooked through.
Step 4 Divide between serving plates and garnish with parsley.
