2 large eggs
1 teaspoon olive oil
2 teaspoons milk
40g smoked salmon slices
1 tablespoon cottage cheese
1/2 cup (60g) watercress
1 thick slice ciabatta
Salt and pepper to season
Step 1: Heat oil in non-stick fry pan on medium heat. Whisk the eggs, milk, salt and pepper in a large bowl until combined.
Step 2: Pour egg mixture into the pan and spread evenly. After 1 minute, top with cottage cheese, salmon slices and half the watercress.
Step 3: Carefully fold the omelette in half. Remove from heat and serve with remaining watercress and toasted ciabatta.
