1 large egg
1 tablespoon skim milk
2 florets frozen broccoli, thawed and chopped
1 tablespoon frozen peas, thawed
1 teaspoon fresh herbs, chopped
Pinch of freshly ground black pepper
Step 1 In a microwavable mug or ramekin, whisk egg, milk, and pepper until combined.
Step 2 Add broccoli, peas, and herbs. Make sure ingredients are evenly dispersed.
Step 3 Cook on high in the microwave for 1 minute, just until egg is completely cooked. Serve immediately.
Change up the flavours to suit your tastes. Try pumpkin and spinach, or red onion and tomato for a twist.
