500g pork fillets
2 cloves garlic, crushed
2 tsp cumin seeds
1/2 tsp ground coriander
1/4 tsp ground paprika
2 tsp olive oil
Garden salad, to serve
2 cups brown rice, cooked (1 cup raw)
1/2 cup orange juice
2 tbsp honey
2 tbsp salt reduced soy sauce
2 tbsp dijon mustard
1. Cut pork into 3 cm cubes. Combine with garlic, cumin, coriander, paprika and oil.
2. Thread pork onto skewers.
3. Combine all ingredients for glaze in a small saucepan and bring to boil whilst stirring. Reduce heat and simmer for 5 minutes or until thickened slightly.
4. Whilst glaze is simmering, cook skewers in a pre-heated non-stick pan, grill or barbecue for 5 minutes or until browned and cooked through, turning occasionally.
5. Serve kebabs drizzled with honey glaze, a portion of rice, and 2 cups of salad per person.
