1 zucchini, cut into 1/2 inch slices
1 capsicum, cut into 3/4 inch squares
1/2 red onion, cut into wedges
250g skinless chicken breasts, cubed
1 lemon cut into wedges for serving
Marinade:
1 Tbsp minced garlic
1 Tbsp lemon zest
2 Tbsp lemon juice
1/2 cup minced fresh herbs
Pinch salt
1/4 Tsp pepper
2 Tbsp extra virgin olive oil
Step 1 Combine garlic, lemon, herbs, salt, pepper, and olive oil in a small bowl.
Step 2 Place chopped vegetables and 2 tablespoons of the marinade in a zip lock bag and toss to coat.
Step 3 Place chicken in separate bag and add remaining marinade and toss to coat. Let marinade in the fridge for 30 minutes to 4 hours.
Step 4 Thread the skewers with meat and vegetables.
Step 5 Grill for 3-4 minutes on medium heat. Continue to cook until the chicken is cooked through, turning regularly.
Step 6 Serve with a wedge of lemon.
