Easy Watermelon Salad with Feta and Mint

Serves: 4

Ingredients:

  • 4 cups (600g) watermelon, cubed
  • 100g reduced fat feta, crumbled
  • 1 small red onion, thinly sliced
  • 1 tbsp extra virgin olive oil
  • 1 juice of a lemon
  • Handful fresh mint leaves, finely chopped

Method: 

  1. Place the watermelon on a serving platter. Scatter over the feta and onion.
  2. Drizzle with the oil. Squeeze over the lemon and scatter with the mint. Serve immediately.
