- 4 cups (600g) watermelon, cubed
- 100g reduced fat feta, crumbled
- 1 small red onion, thinly sliced
- 1 tbsp extra virgin olive oil
- 1 juice of a lemon
- Handful fresh mint leaves, finely chopped
- Place the watermelon on a serving platter. Scatter over the feta and onion.
- Drizzle with the oil. Squeeze over the lemon and scatter with the mint. Serve immediately.
