Cucumber & Red Onion Salad

Ingredients (serves 8)
2 large cucumbers, chopped
1 red onion, thinly sliced
1/3 cup apple cider vinegar
1/4 cup water
1 tablespoon sugar
1 teaspoon fine sea salt
1 teaspoon black pepper
¼ cup dill, chopped

Method

  1. Add cucumber and onion to a large bowl.
  2. In a small bowl, combine apple cider vinegar, water, sugar, salt, pepper and dill.
  3. Pour mixture over the vegetables and toss well.

TIP
Serve as an accompaniment to any grilled meat such as chicken, steak or seafood.
