2 medium zucchinis, sliced into noodles
2 cups broccoli, steamed
250g lean beef, thinly sliced
Dressing:
3 tsp light brown sugar
1 tbsp olive oil
1 1/2 tbsp lime juice
1/2 tbsp reduced sodium soy sauce
1 tbsp reduced fat peanut butter
1/2 tbsp ginger root, grated
1 garlic cloves, minced
1/2 tsp sesame oil
2 tsp sesame seeds
Step 1 On a medium heat, brown beef in a non-stick frying pan.
Step 2 Add all ingredients for the sauce to the pan and simmer for 2 minutes, until slightly reduced.
Step 3 Place the zucchini ‘noodles’ into two bowls and top each with half of the broccoli and beef. Serve sprinkled with sesame seeds.
