Ingredients (makes 12)
1 ¼ cups dried apricots
14 fresh dates
¼ cup shredded coconut
¾ cup oats
2 tablespoons coconut oil
Instructions
Place all items in a food processor and blitz until combined. If mixture doesn't come together, add a tablespoon of water and blitz again until it sticks together.
Take a teaspoon of mixture and roll into balls.
Roll in a little extra coconut if desired.
