Step 1: Stir fry pork until golden brown and set aside once cooked.
Step 2: Stir fry sherry, onion, ginger and celery for approx two minutes.
Step 3: Mix together cornflour and a little water to form a paste. Add remaining water then add to the pan. Cook—stirring for approx three minutes.
Step 4: Add cooked pork and bean sprouts to the pan. Heat through and serve over rice.
