6 celery sticks, trimmed
1/2 small carrot, grated
1/4 cup light spreadable cream cheese
1/4 cup hummus
2 tbs sultanas or dried apricots, chopped
2 tbs walnuts, chopped
1. Slice each celery stick into four pieces.
2. In a small bowl, combine the cream cheese and carrot.
3. Fill half the celery sticks with the carrot mixture. Then top with sultanas or apricots.
4. Fill the remaining celery sticks with hummus and sprinkle with walnuts. Serve.
