Ingredients (serves 8)

600g grilled chicken, sliced
10 cups spinach
1½ cup sliced strawberries
½ cup crumbled feta
½ cup toasted nuts, chopped (ie slivered almonds, walnuts, or pine nuts)


3 Tbsp. balsamic vinegar
1½ tsp honey
½ tsp Dijon mustard
½ tsp minced garlic
½ tsp onion powder
½ tsp salt
1/8 tsp black pepper
1/3 cup olive oil


1. Add salad ingredients to a large bowl and toss to combine.
2. When ready to serve, combine dressing ingredients in a small bowl and whisk well with a fork.
3. Drizzle salad with dressing immediately, and divide amongst bowls.
