Stir-fried Asian Greens & Mushrooms

Ingredients (serves 6)
2 tbsp peanut oil
2 garlic cloves, crushed
2 tsp finely grated fresh ginger
100g fresh mushrooms, chopped
2 bunches gai lan, trimmed
2 tbsp oyster sauce
1 tbsp soy sauce
2 tbsp water

Method

  1. In a wok, heat oil over medium to high heat. Add garlic and ginger, tossing for about 30 seconds.
  2. Add the vegetables, tossing over the heat for about 3 minutes.
  3. Add the oyster sauce, soy sauce and water. Toss to coat then reduce heat to low. Cover and cook for 2 minutes until the vegetables are tender.

TIP
Gai lan is also known as kai-lan, Chinese broccoli, or Chinese kale.
