Pork & Tarragon Patties with Salad

Ingredients

  • 500g pork mince
  • 1 tbsp fresh tarragon, chopped
  • 1 large fennel bulb
  • 1 brown onion, chopped finely
  • 1 clove garlic, minced
  • 1/3 cup fresh breadcrumbs
  • 2 cup rocket and spinach leaf mix
  • 1 granny smith apple, unpeeled
  • 15-20 seedless red grapes, halved
  • 1/2 cup pistachio nuts, roasted and roughly chopped
  • 1 lemon, zested and juiced
  • Olive oil spray

Method

Step 1: Finely chop one half of the fennel bulb.

Step 2: Spray pan with oil. Sauté finely chopped fennel, onion and crushed garlic until onion softens.

Step 3: Combine fennel, onion and garlic mixture with the pork mince, tarragon and breadcrumbs.

Step 4: Shape mix into 8 patties.

Step 5: Respray pan with oil and cook for 3-5 minutes each side or until browned and cooked through.

Step 6: Finely slice the remaining half fennel bulb and apple.

Step 7: Combine rocket, spinach, fennel, apple, halved grapes and roasted pistachios in a salad bowl.

Step 8: Add lemon zest and drizzle with lemon juice.

Step 9: Serve patties with salad and a tsp of low fat dressing on the side.
