Ingredients (serves 4)
30ml olive oil
1 clove garlic
400g button mushrooms
Handful of flat leaf parsley
Handful of thyme
3 tablespoons of lemon juice
160g feta cheese
8 slices wholemeal bread, toasted
1. Turn oven on to grill mode.
2. Meanwhile, heat olive oil in a pan over medium heat. Sauté the garlic, mushrooms and herbs for 3 minutes.
3. Drain excess liquid, place mushrooms onto toasted bread. Place onto a grill pan and put in the oven for 5 minutes, or until bread is golden.
4. Top with feta and drizzle with lemon juice.
