2 green tea bags
2 cups hot water
3 cups chicken stock
2 cloves garlic, sliced
2cm knob of fresh ginger, sliced
1 tablespoon soy sauce
1 tablespoon fish sauce
5 mushrooms, sliced
1 carrot, sliced
500g chicken pieces
250g Soba noodles
2 cups green vegetables, sliced
¼ cup coriander leaves
1 red chilli, sliced
1. In a large saucepan, steep tea bags in hot water for 5 minutes. Discard tea bags. Add stock, garlic, ginger, sauces, mushrooms, carrot and chicken, and simmer over medium heat for 20 minutes until the chicken is cooked through.
2. Add greens and noodles and cook for further 5 minutes.
3. Evenly distribute the soup between bowls, and sprinkle with coriander leaves and chilli to serve.
Tip: Some suggested greens for this recipe include bok choy, broccoli etc
