200g frozen peas
400g wholemeal pasta
1/2 cup olive oil
2 large cloves garlic, minced
1 cup fresh basil leaves
1/4 cup fresh grated parmesan
Salt and pepper
Step 1 Over high heat, bring a large saucepan of water to boil. Cook the peas for 8 minutes, then transfer to a food processor. Add pasta to saucepan and cook as per package directions.
Step 2 Add basil, olive oil, garlic and salt and pepper to food processor with the peas and process until mixture resembles a chunky pesto. Transfer to a large bowl and fold in parmesan.
Step 3 Drain pasta, keeping 1/2 cup of cooking water. Fold the pasta through pesto, adding a little pasta water if pesto is too dry. Divide amongst plates and serve topped with freshly cracked pepper.
