INGREDIENTS (SERVES 4)
1 tablespoons extra virgin olive oil
700g medium green king prawns, peeled, deveined
4 garlic cloves
1 large red chili
2 cups rocket
2 zucchinis, spiralised or peeled into ribbons
METHOD
1.Heat oil in a large non-stick frying pan over medium to high heat, add prawns, season with salt and pepper then cook for 1 minute.
2.Add garlic and chillies then cook for another minute. The prawns will be ready when they are curled up.
3.Add the rocket and zucchinis, and toss through with the prawns, then serve.
