Chicken Rice Paper Rolls

Ingredients

  • 200g lean chicken breast (skin removed - cooked supermarket chicken is fine for ease)
  • 4 large rice paper rolls
  • 1 cup snow pea sprouts or similar
  • 8 fresh mint leaves
  • 1/2 cup fresh coriander
  • 2 tbsp fish sauce
  • 2 tbsp fresh lime juice
  • 2 tsp rice wine vinegar
  • 2 tsp honey
  • 1/2 a garlic clove, crushed
  • 1 small red chilli, chopped (deseeded if less heat preferred)

Method

Step 1: Shred cooked chicken and set aside.
Step 2: Wash and finely slice/chop vegetables and herbs and set aside.
Step 3: Fill a wide, shallow bowl with warm water.
Step 4: Soak rice papers individually until soft. This will only take seconds. If they are too wet, they will be really difficult to roll. This may take some practice but persevere – the results are well worth it!
Step 5: Once soft, lay wrapper on clean work surface
Step 6: Layer 1/4 of the shredded chicken and prepared vegetables and herbs onto the edge of the roll closest to you.
Step 7: Begin to roll gently away from you, enfolding the filling as you go. You can tuck one or both of the edges by folding them in towards the centre and continuing to roll or leave them open so that the fresh ingredients are visible from one or both ends.
Step 8: To make the Viet dipping sauce, combine the fish sauce, lime juice, rice wine vinegar, honey, garlic and chilli in a dipping bowl making sure the honey is dissolved. Slight heating will help with this.
