Beetroot Dip

Serves 4

Ingredients

  • 450g can baby beetroot, drained, coarsely chopped
  • 1 cup Greek style (low or no fat) yoghurt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and freshly ground pepper, to taste

Method

Step 1: Combine ingredients thoroughly in a bowl.
Step 2: Taste and season with salt and pepper to desired liking.
Step 3: Serve with a selection of vegetables
Step 4: Stir well before serving.
