Miso Glazed Snapper with Greens

Ingredients

1 tbsp miso paste
1 tbsp soy sauce
2 tsp honey
1 clove garlic, crushed
2 x 200g skinless snapper
1 tsp sesame oil
1 large chilli, thinly sliced
2 bunches broccolini, halved lengthways
120g mixed leafy greens
150g mixed mushrooms
1 tsp sesame seeds
Juice of 1/2 lime
1 spring onion, thinly sliced

Method

1. Preheat the oven to 200 celscius. Line a baking dish with baking paper.
2. Combine the miso paste, half the soy sauce, garlic and honey in a bowl. Add the fish and turn to coat. Cover and place in the fridge for 30 minutes to marinate.
3. Combine sesame oil, chilli, and remaining soy sauce in a bowl. Add broccolini, greens, mushrooms and sesame seeds, toss to combine, then spread over the base of prepared baking dish. Top with fish. Roast for 18-20 minutes until fish is just cooked and the broccolini is tender.
4. To serve, squeeze over lime juice and scatter with spring onion.
