Ingredients

1 cup quinoa
1/2 cup pepitas, toasted
1/2 tsp Olive Oil
400g black beans, drained
1/2 red onion, diced
2 mangoes, diced
2 cups spinach chopped
4 tbs coriander, finely chopped
1 avocado
For the Dressing
1 tbs Apple Cider Vinegar
1 tbs lime juice
1/4 tsp salt
1/4 tsp ground cumin
1/4 tsp paprika
¼ cup coriander, chopped
1 tsp olive oil

Method

1. Cook quinoa to packet directions, and cool in refrigerator.
2. In a large bowl combine the quinoa, beans, onion, mangoes, spinach, coriander, and pepitas.
3. In a small bowl, combine the dressing ingredients. Pour over salad and toss well.
4. Before serving, dice the avocado and gently toss into the salad. Top with freshly cracked black pepper.
